Kim HuntWhen you receive an invitation to a preview training event at the new Ruby Sunshine restaurant in Gatlinburg, you happily accept it!
I have been excited to try out this restaurant since I learned that it would be opening in Gatlinburg several months ago. I was so excited when I received the invitation to join the special training event for the staff to hone their skills before opening the doors to the public on February 19th.
The restaurant is in a perfect location. It is located at 105 Reagan Drive, directly across from the Gatlinburg Sky Bridge. We were able to find a parking space close by in one of the paid parking lots.
The restaurant is located on the second level of the building in which it is housed. There is stair access as well as elevator access.
When we arrived at the hostess stand, we were promptly welcomed and shown to our table. Our server, Sean quickly arrived at our table to take our drink orders and recommend a few menu items. He informed us that he’d tried everything on the menu and told us to let him know if we had any questions.
The cereal and milk pancakes of the day flavor was Fruity Pebbles. I figured my daughter would choose this one, but she opted for a chicken sandwich.
The restaurant has an industrial vibe, complete with yellow, red and black accents to match the Ruby Sunshine logo. There are plenty of tables with great views of Gatlinburg.
And now, for the food!
I chose Migas, a Tex-Mex scramble with onion, tomato, cilantro, pepper jack cheese & chorizo sausage, over crispy tortilla strips, served with avocado, chipotle sour cream and pico de gallo. It was heavenly! I don’t think I stopped eating once I dove into it. The flavors were amazing. I highly recommend it!
Next up is the Hot-Smoked Salmon, grilled, hot-smoked salmon served over a buttermilk biscuit, topped with two poached eggs, dill hollandaise, red onions & flash-fried capers. This was the meal that my friend’s daughter chose. She said it was delicious. I tried a bite of it and I most definitely agree. If you like salmon, you’ll LOVE this plate!
My friend chose The Trifecta, which was recommended by our server Sean. He said that it was the best way to try more than one item. It was composed of Eggs Cochon, Chicken St. Charles & Shrimp Boogaloo. Eggs Cochon, an apple-braised pork debris served over a buttermilk biscuit, topped with two poached eggs, finished with hollandaise. Chicken St. Charles, fried chicken served over a buttermilk biscuit, topped with two poached eggs, finished with a pork tasso cream sauce. Shrimp Boogaloo Benedict, gulf shrimp sautéed with pork tasso and creole tomato coubion served over fried green tomatoes, a buttermilk biscuit and two poached eggs. I also tried a bite of each of these and they were all amazing. I think the Shrimp Boogaloo was my favorite of the three. The other two were very good as well!
And finally, as I mentioned above, my daughter chose the Crispy Chicken Sandwich, fried chicken dressed with spicy creole slaw, mayo, creole mustard, lettuce & tomato on a brioche bun. Sandwiches are served with your choice of fries, creole slaw or fresh fruit. She chose fries. I also had a bite of both the sandwich and fries. Total perfection. The sauce in the slaw was out of this world!
The decor throughout the restaurant has a food theme as well, even down to the bacon and egg wallpaper in the bathrooms!
We will DEFINITELY be visiting again!
